Got it sorted! Turns out the wire was in place all along, just the cluster was expected the tacho on pin 20 (as I had them in my previous van). So I moved the tacho wire from the factory pin 21 position, to pin 20 on the connector plug and all works fine! To finish off, any escort made 2000 on, that came with digi dials as standard, should have the tacho feed in place, from the ECU rather than the alternator, and any dials can be used, you don't need diesel specific ones like when fitting a rev counter to earlier models. On the 1.8 TD ./ TC, The tacho feed come from pin 18 on the ECU via white / black wire, through the fuse box, to pin 21 on the instrument cluster connector plug. The ECU gets its signal from the crank position sensor and multiplies this to create and output the tacho signal on pin 18. Hope this helps others as it has been difficult to find information on it!
